Kinme Omakase Opens in San Diego

One of San Diego’s most anticipated openings of the year, Kinme Omakase offers unique, upscale fare with only 10 seats per night.

Kinme Omakase, an immersive Japanese dining experience, has opened in the heart of San Diego‘s Bankers Hill. Exclusive and exquisite, the new restaurant is derived from a progressive approach to a deep history of Kaiseki and Edomae-style sushi–with just 10 seats per night.

These two historical Japanese cooking approaches, Kaiseki and Edomae, are carried out by combining fresh fish and seasonal ingredients from Tokyo and the surrounding area to make highly individualized dishes, in accordance with the chef’s wishes. Executive Sushi Chef Nao Ichimura meticulously prepares the fish while Chef de Cuisine Kevin Alvarado curates seasonal San Diego produce and classic French cooking to create edible masterpieces.

This spring, diners can experience Kinme Omakase as it pays homage to the Kaiseki sequence. A multi-course affair, 10 different plates are served to guests, starting with Sakizuke, a selection of starters, and ending with Kashi, a dessert course, and a traditional Matcha tea service. The 10-course meal is priced at $175 per person. To pair with the tasting, Kinme boasts a fine selection of vintage burgundy wines, vintage wines, exclusive sakes and Japanese whiskeys. 

This intricate, individualized experience takes reservations only at the beginning of the month. The 900-sq.-ft. space is modeled after a traditional tea ceremony room and eliminates distractions; hence the reason for only 10 seats. This allows for San Diego residents and out-of-towners to truly immerse themselves in Kinme’s delicate cuisine–as well as interact with other diners seated at the centralized table.

A passion project for its owners, Shihomi Borillo and Chef Ichimura, Kinme Omakase is based around one of San Diego’s first sushi restaurants, Azuki Sushi. Keeping in traditional Japanese aesthetic is important to the duo as is challenging each other outside of the kitchen, where they regularly surf together in La Jolla. 

Kinme Omakase is open Wednesday through Sunday, with two seatings per night at 5 p.m. and 8 p.m. Make sure to book reservations soon, as its 10 seats fill up quickly. For more information, visit kinmeomakase.com
