Richard Blais’ Steakhouse Ember & Rye Re-Opens

Celebrity Chef Richard Blais’ renowned steakhouse Ember & Rye has reopened, overlooking the 18th hole of the Aviara Golf Club at Park Hyatt Aviara in Carlsbad.

Chef Richard Blais introduced James Beard Award semifinalist Jonathan Bautista as the new executive chef of Ember & Rye, bringing decades of culinary experience from across the greater Southern California market.

“It’s not every day you get the chance to celebrate a deeply passionate project all over again. I couldn’t be more excited to have the opportunity to re-introduce Ember & Rye to the dynamic culinary destinations of Carlsbad and the larger San Diego region,” says Chef Blais. “This time around, our vision extends beyond just dining; it’s a culinary adventure with an opportunity to blend flavors and creativity. Ember & Rye overlooks the 18th hole of Aviara Golf Club, offering stunning views for locals and visitors. It serves as the unofficial clubhouse for the golf course and is the perfect place for lunch or dinner for golfers. The restaurant’s interior has a vintage vibe with modern twists, featuring several rooms and patios to dine, and a private dining room for meetings or parties.

As for the new menu, Chefs Blais and Bautista have really outdone themselves with a diverse and well-executed selection. We were genuinely impressed with each dish we tried, from appetizers to entrees to desserts. The combination of flavors and the execution of how each item was prepared were five stars all the way.

To start your meal at Ember & Rye, the A5 Wagyu pastrami skewers are a customer favorite. Especially if you are not ordering a steak for your entree, this dish offers the perfect-sized bite of expertly cooked steak to kick off the meal. For a seafood appetizer, the diver scallop crudo is a light and refreshing dish served with embered Fresno chili, pineapple, radish, tomato, ginger, and anise hyssop.

For entrees, you can choose from crab and lobster bucatini, prime rib, veal chop, salmon, and chicken – but obviously, the real standouts on the Ember & Rye menu are the steaks. There are eight steak cuts to choose from, including a classic filet, an A5 Wagyu New York strip, and a ribeye, to name a few. One of our favorite cuts is the Denver – an 8-oz. Snake River Farms American Wagyu gold. This cut has a little more fat than a filet, so while it is still a lean cut, it packs a little more flavor. To complement your steak, choose from a variety of sauces, including chimichurri, béarnaise, and rye whiskey gravy. Sides offered include sherry-glazed mushrooms, potato puree, and embered Brussels sprouts.

While you may feel stuffed from the glorious appetizers and entrees at Ember & Rye, we suggest you save room for dessert. The Charlotte is a real show-stopper featuring a raspberry-orange blossom pour-over. Other options on the dessert menu include cherry pie, piña colada cake, and s’more mousse.

Finally, Ember & Rye offers a lovely wine selection and a great cocktail program. Some notable cocktails are the Not Too Old Fashioned, Smoking Ember, and The King & Rye. The steakhouse also offers several mocktails that are both tasty and beautiful.
