If you’re not already a gin fan, Tommy Bahama Restaurant & Bar might bring on your taste for it. The Summer of Gin cocktails are made up of three distinct options. The Southwest Swell is the brainchild of a bartender at the Newport Beach location. Made with Tommy Bahama gin, lemon, apricot puree, rhubarb and Luxardo Albicocca liqueur, the Southwest Swell is bright and sweet. The Permanent Vacation is aptly named, as this combo of gin, Aperol and watermelon puree will have you wishing you could enjoy the drink on a perpetual holiday. The Herb Your Enthusiasm, made with gin, peach, basil and lemon, is simple and refreshing for those who don’t want anything too sweet.

For the table, we suggest starting with the whipped ricotta, which is topped with fermented chile sauce and served with toasted sourdough toast for dipping. A trip to Tommy Bahama Restaurant & Bar isn’t complete without an order of its famous coconut shrimp. While the restaurant offers the option of four or six pieces, we speak from experience when we say to always order six.

On the summer menu, the macadamia nut-crusted halibut will transport you straight to Hawaii. The tropical classic is cooked to perfection and served with flavorful almond rice and large asparagus spears. The Chilean sea bass is a summer-centric item on the regular menu that you’d be remiss not to try. The buttery, flaky fish is served with an incredible guajillo-roasted tomato risotto. It is topped with a citrus-olive relish and accompanied by a jalapeño-avocado salsa to give it a little heat.

For those who have trouble deciding on just one dessert, Tommy Bahama Restaurant & Bar offers half portions. We were immediately sold on that idea and ordered both the piña colada cake and the Key lime pie. The cake is a standout, featuring layers of moist coconut cake, pineapple filling and a creamy coconut frosting. The Key lime pie is made exactly as it should be. The tangy and sweet filling sits atop a graham cracker crust and finished with a dollop of whipped cream.
