Opened in November 2022, Ambrogio by Acquerello was born from a partnership between the San Diego-based restaurant group, Ambrogio15 and Michelin-starred restaurant Acquerello by Chef Silvio Salmoiraghi in Milan. What they have created with Ambrogio by Acquerello is truly something special, from the ambiance to the service to the food – no detail has been overlooked. As you step into Ambrogio by Acquerello, you are greeted by an inviting and elegant ambiance that is a perfect blend of contemporary and classic design elements. Each evening, the restaurant offers two tasting menus and optional wine pairings. The eight-course prix-fixe tasting menu features an omnivore option and a vegetarian option that can be made fully vegan by request. (They can also accommodate other dietary restrictions such as a gluten-free diet.) Chef Salmoiraghi’s pedigree includes working at Joia, the first vegetarian Michelin-starred restaurant in Italy, so here the vegetarian menu is certainly no afterthought. The dishes are inspired and unique, making it a memorable meal for anyone, regardless of their dietary choices or restrictions.
Ambrogio by Acquerello’s tasting menus change seasonally, offering a completely new experience for returning guests. Each artfully designed dish draws inspiration from France, Korea, Japan, California and Italy. The restaurant’s wine list specializes in organic, vegan and biodynamic wines from small farmers and winemakers throughout Italy who share a strong love for their land and their grapes. The restaurant also offers a selection of craft cocktails, Italian beers and sake.
For a private dining experience, the Chef’s Table is located in the “Private Kitchen Living Room” where you will be able to enjoy a special dinner while watching the culinary team at work in the kitchen. The experience can be reserved for a group of two to six people.
