Sushi by Scratch Restaurants: Healdsburg Opens at The Matheson

Los Angeles-based Scratch Restaurants Group has opened Sushi by Scratch Restaurants: Healdsburg within The Matheson, a renowned Sonoma food and wine experience. This marks the restaurant’s third California location (after Los Angeles and Montecito).

Sushi by Scratch Restaurants: Healdsburg has made its debut at Dustin Valette’s The Matheson. From the Michelin-starred group from husband-and-wife chef team Phillip Frankland Lee and Margarita Kallas-Lee, Sushi by Scratch can count the likes of Prince Harry, Megan Markle, Cameron Diaz and Gwyneth Paltrow among its adoring fans.

“The fact that Healdsburg has become the epicenter of luxury hospitality in California’s Wine Country—coupled with the idea of partnering with Dustin, who is a chef we’ve admired for a long time—made this a really easy decision for us,” says the Lees, in a press release. “We’re looking forward to providing a new fine dining option for visitors and locals in Sonoma who want to experience our very personal and boundary-pushing take on an omakase sushi experience.” 

The new Healdsburg location offers guests its famed innovative 17-course omakase-inspired tasting menu, featuring Lee’s signature nigiri creations and Kallas-Lee’s desserts, in a luxe private dining room. The restaurant operates in a speakeasy fashion, tucked away in the private dining room in the back of The Matheson on Healdsburg Plaza.

Sushi by Scratch Restaurants: Healdsburg hosts three seatings each night (4 p.m., 6:15 p.m. and 8:30 p.m.), during which 10 guests are guided through an intimate, progressive 17-course nigiri tasting menu experience, showcasing fish and shellfish from Tokyo’s world famous Toyosu Fish Market.

Some signature pieces include hamachi painted yellow with sweet corn pudding and topped with a fine sprinkle of breadcrumbs made from Kallas-Lee’s famous sourdough; albacore wrapped in sake-soaked nori and topped with ponzu, fresh wasabi and crispy onions; Lee’s signature roasted bone marrow nigiri seasoned with soy sauce, sea salt and freshly grated wasabi root; and fan-favorite unagi that’s fried crispy in the rendered bone marrow fat from the previous course and then dressed with poblano yuzu kosho, soy sauce, ponzu, lemon and sea salt.

The beverage program is led by Sake Sommelier and Director of Operations Gavin Humes and showcases a thoughtful selection of Japanese beer, sake and whisky. A trio of beverage pairings is offered (ranging from $105 to $125) to partner with Lee’s sushi, and beverages are also available a la carte. 

The omakase experience is $185 per person plus tax and service charge, with additional add-ons and beverage pairings available. Reservations are required and are released on the first of every month at noon PST; reservations can be made via Tock. Experiences are available from Wednesday through Sunday to begin and will later expand to seven days a week.
